CONCEPT AND MENU DRAFT PROPOSAL

Barbeque Casual

As a group, we decided to make our proposal with a barbeque casual theme used for summer events (8 Tips for Hosting the Best Summer BBQ, 2020). We decided to use this theme so that it could be tailored by the choice of our food, the kind of occasion to be held at TRU, and more so the location of Thompson River University. Apart from the event being a fundraiser, the theme will steer up the summer out-door entertainment with a get together party after the fundraising. We believe that the participants of the event are close people and it will be a good move to provide a theme that would remind them a sense of togetherness.

Description and the theme

We agreed on using barbeque casual as our theme for event because we believe that it is a simple event theme that requires less attention but at the same time very attractive. We will make it simple by keeping it casual to suit the anticipated 100 guests and maximize changes of getting good cash-out. Invitations will be sent to the expected guests with a request for them to confirm their attendance buy busying an event ticket through online payment. During buying of tickets, the guests would be reminded to choose which of the low-key activities listed on the invitation they will undertake. The activities will be horseshoe, bocce, and croquet; anybody taking part in any of the activity will be required to pay a certain amount that will help to steer up the fund-drive. There will no formal sitting coordination. Even though there will be enough seats for the guests, arrangement will be made so that there is enough space where guest can walk and interact with each other. The event will be graced by a killer playlist that will keep on playing at a low tune throughout the process.

Menu and food service style

In our menu for this event, we will choose to explore American food that consist of three main categories. Salads – (potato, Caesar, three bean); main course that involves grilled meat (ribs, chicken) or Portobello mushroom with potatoes and veggies; and desserts that includes pies (apple, peach, berry) and ice scream. About the beverages – we have chosen wide range of alcoholic and non-alcoholic drinks with a special signature cocktail that suits the event. In consideration with the Covid – 19 pandemic, we decide to have a buffet food service style. Through this kind of service, guests will be served; one at a time so that we adhere to WHO guidelines as much as possible.

Event setting and decoration

Our dressing code will go hand in hand with the barbeque casual theme. Putting on red, white and some plums will be so appealing with how venue décor will be done. The event might run up to at night, there will be need of lighting with same décor color; red and white. Some candle will be added to give a special lighting view. The images below shows how the decoration and venue set up will look like during the event.

Salad Recipes

Creamy potato salad

Procedure

Potatoes are placed in 3-quart saucepan and enough water is added. The content is covered and heated to boiling and the heat is reduced to low. Cook potatoes while cover for about 30 minutes until potatoes are tender. Drain excess water, and cut the potatoes into reasonable cubes. Mix mayonnaise, vinegar, mustard, salt and pepper in a huge glass or plastics bowl. Add potatoes, celery and onion, toss and stir in eggs. Sprinkle with paprika. Cover and refrigerate at least 4 hours to blend flavors and chill. Store while covered in refrigerator.

 

Warm potato salad with Caesar dressing

Cook the potatoes in boiling salted water until tender. Meanwhile, pound the garlic and anchovy fillets to form a paste. Mix with the mayonnaise, olive oil, lemon juice and Parmesan. Season with salt and pepper. Toss the dressing through the potatoes with the spring onions while still warm.

In a large bowl, mix the 3 different types of beans, the celery, onion (drained of soaking water), parsley, and rosemary.

Grilled Chicken

Preheat grill to medium high heat, approximately 375-400°F. In a small bowl mix: garlic powder, cumin, coriander, smoked paprika, sea salt, pepper, and olive oil. Mix until combined. Rub mixture over both sides of the chicken. Place chicken on grill and grill each side for 4-7 minutes depending on thickness or until no longer pink. Let rest for 5 minutes to let juices reallocate and slice to serve.

 

Portobello Mushroom with potato and veggies

Procedure

Add 1 tablespoon butter and panko crumbs to pan over medium heat. Cook while stirring until lightly toasted. Place in a dish and set aside. Wipe mushrooms clean with a damp paper towel. Use a spoon to scrape and gently remove the gills underneath. Slice mushrooms ¼” thick. Heat olive oil in a frying pan over medium high heat. Add thyme and mushrooms stirring just to mix. Cook mushrooms 4-5 minutes without stirring or until caramelized one side. Stir and continue cooking until mushrooms are cooked. Add in 1 tablespoon butter, garlic and salt & pepper to taste. Cook 1 minute more. Sprinkle Panko crumbs over mushrooms (with parmesan cheese if using) and serve.

Procedure

Combine all ingredients, stirring to dissolve sugar completely. Fill cylinder of ice cream maker no more than two-thirds full; freeze according to manufacturer’s directions. (Refrigerate any remaining mixture until ready to freeze.) Serve immediately or store in covered containers in freezer.

Beverage Service option

Both alcoholic and no alcoholic drinks will be available for the event. Those who love cocktail will also enjoy our freshly prepared cocktails by our experts. There will be an offer for only one drink and anyone who will finish their offer, will have to buy themselves other drinks. Other drinks like coffee, tea and juice will be offer free of charge for the quests.
